I mean, they obvisouly act like animals like the other Pokemon, but they must the only source for good veggies.

That would be eating the products of a Pokemon - not eating the Pokemon themselves. Vegetables and trees and plants of all kinds seem present in the Pokemon world - so it doesn't seem like people would have to eat Pokemon to survive if they were vegetarians.
But since we haven't seen a normal animal like a cat or an elephant or a cow, it may well be that meat, on the other hand, comes from Pokemon...
What about plant-type Pokemon that seem to be specifically made of plant matter?
Depends on if the vegetarian is a vegetarian for moral reasons ("It's wrong to brutally kill animals for meat processing!") or not. If they're just there for the health benefits, they may go for an Oddish or two.

Pokemon Earth grass grows back at an astonishing rate. Leave the area and return right away and it's already back to chin-height.

I sure wish the current Pokedex showed the Pokemon more as wild creatures like in the first generation.
