Actually, that only happened in the movies. In the books and comics, Darth Maul was a recurring character.
I've barely ever followed Expanded Universe, so I'm just going by the canon set by both of the movie trilogies.

I'd say the books are optional canon. They movies stand by themselves and have their own canon, and the books have a separate canon in which they also are true to the story.
I don't mind spoilers at all, because I'll never read or even confirm the existence of these supposed 'three books' since Return Of The Jedi was the end of the Star Wars saga to me.
*sigh* there are also rumors that these three books will be made into movies as well, though I don't see how that's possible at this point. (Luke's actor is to old.)

Personally, I hope there are no new Star Wars movies as I think ROTJ wrapped up the saga quite nicely.
True, it was a good and solid ending, because at the time, there were no thoughts of making the other books into movies. Thoughts like that hadn't been in planning untill... some time around 2000 I think...
